Meal Planning

I try to cook every night that Lincoln is home and I do really well at that. When I cook I always cook enough for about 4 people. This always usually leaves leftovers that we use for our lunches the next day.  Since I love to cook and do so often I used to just plan my meals for the week and notate them on the bottom of each day in my planner.  I was at Rachael's house not too long ago and noticed her meal planner that she makes on a monthly basis taped to her frig.  I thought DUH MEGAN!!! I should do that in my planner for the entire month.  That only makes the most sense since we only go to the grocery store once a month and stock up on everything.  Not only am I really prepared we can save money at the store by knowing ahead of time what I will be cooking so we aren't buying unnecessary items. 

I started by first recording Lincoln's schedule for the entire month in my planner...I usually only did this on a weekly basis as well.  This helps me plan because I don't cook on the nights that he is working nights.  I'll just fix myself something quick and easy like a salad or tuna. 

After I record Lincoln's work schedule I decide what I want to cook then fill in the blanks all while trying to balance what goes in each week...not too much chicken, not too much Mexican, you get the drift and of course no repeats.  After I get my menu planned I make my grocery list so we know what to pick up from the store. 



May is the first month that I've done this and it really helped.  I'm going to have a ton of meals leftover that will make next month easy because beside Lincoln working his regular schedule he's been working a ton of overtime and its been mostly nights so all those meals that were planned aren't getting used this time around.  To make it easy on me I just circle the meals that I haven't used so I know that I can use those for next month.

just your regular spaghetti but instead of beef I used some ground deer meat we had in the freezer from this past hunting season

today's lunch/supper....crock pot cheesey chicken and rice

Today's lunch/supper is actually a rarity because Lincoln is working nights over the weekend but since I'm home and I have to eat too I decided to make something that is easy and Lincoln can take in his lunch. 

I used several chicken breast, 2 cans of cream of chicken soup and 1 diced onion.  I also add black pepper, salt, and garlic powder to taste.

Cook on low for 6 hours then add cooked rice, 1 can of corn, and cheese. Let the cheese melt and cream everything together!

DINNER IS SERVED

On my Bloglovin account I have all the blogs I follow sorted into 2 categories just regular everyday blogs and the blogs that are MUST READS!  The must read folder are the blogs that I've come across and I love them so much.  They post often and their content is interesting.  These are the blogs that I really stalk LOL and if I ever come into real life contact with these ladies I would be like a tween at a Justin Beiber concert. LOL 

* The Freckled Fox...I've blogged about Emily's blog before HERE but that's not going to stop me from putting her in my faves.  I love her I'm serious. LOL  She is so awesome, creative, energetic, and a stay at home mom that has a million projects going all the time.  Stop by you will love her too.... I swear!

* Little Chief Honeybee.... I can't remember how I found Kaelah's blog but it is amazing.  This girl wears dresses everyday, has tons of cool tattoos, and runs several different business from home, including a traveling boutique out of a vintage camper called Honeybean.  She always has really fun posts and is another one that I would love to meet.  Not only would she make a road trip to Nashville worth it but it just sounds like a cool place. 

* Explore. Dream. Discover....is a blog that I've been following for years and Liz is one for the books.  She's a native Portlander living in Amsterdam with her hubby and cute pup.  Liz is so sophisticated and classy and is always going on great trips that I love to read about. 

* The Everygirl...is a blog created by 2 ladies for ladies.  The Everygirl features great women and tells their stories on how they followed their dreams.  They also have posts on current events, design, jewelry, and a little bit of everything else too.  They have something for every 20 something girl!

* All in my Twenties... Kristen is hilarious, speaks her mind, and has some of the craziest post out there.  She is always spilling about jet setting to Cabo with her love or just daily dishing.  She is a fellow Texan and is just a REAL girl.

Will I Remember

Blog Every Day in May: Day 18...only 8 days late.  Tell a story from your childhood.


I can't remember the age exactly but it had to be around 5 years old because my Pop had just died. 

We were extremely close.  I remember him always giving me cinnamon gum and in my teen years I tried several cinnamon gums to figure out which one and it was Dentyne!  I remember the taste.  I also remember sitting at his kitchen table eating Ritz Crackers with Parkay butter on them.  To this day I still eat butter on crackers as a snack but now its saltines and Land of the Lakes!  He would make vanilla pudding in a styrofoam hospital water jug...remember those!  But what I remember most was being so sad when he died.

I was sitting on the back of the couch looking out the window in his house in Winfield, my Mom was there.  I had his driver's license and I was crying.  My Mom asked why and I said what if I forgot what he looked like and how I would never see him again!  A 5 year old just doesn't understand and even 20 years later writing that brings tears to my eyes and a lump to my throat.  I know that he would have been even a bigger influence in my life if he would have been able to be with me up until now. 

 

I know one day that I will see him again and to this day....

DIY: No Sew Roman Shade

I've known for about 2 1/2 years now that I wanted a roman type shade in my bathroom.  I couldn't find the exact one I wanted and then didn't want to fork out the dough for an expensive one so about 2 years ago I bought some semi-heavy fabric and a pattern that contained several different types of curtains, one of them being a roman shade.  Now that I've had that FOR-EV-ER and still haven't sewn it I looked online for a way to make one with no sewing, mainly because I don't know how to make anything with a pattern.  (That's on the to learn list once I'm done with school) 
 
I stumbled across THIS girl's blog where she did it using a mini blind. 
 
Well that works perfect because I could use the mini blind that was currently hanging and my material.  She said not to use hot glue but I'm the hot glue queen so I did and it turned out fine. 
 
Instead of retyping all the instructions you can check out hers because they are very detailed.

TA-DA!  Before, hung up, and how it looks cinched!  PERFECT
This was a super easy project and I love the result.  My fabric is a little wrinkled but they will fall out. :) 
I plan on using one of the burlap sacks I have and make a curtain like this for my laundry room because I need the fabric of the current curtain for Peggy Sue!

Book Review: Dead Ever After


I have been reading the Sookie Stackhouse novels by Charlaine Harris since I started watching True Blood a few years ago.  I love them and even though they don't really follow the show or the show doesn't follow the books they are both so good in their own right. 

The last and latest Sookie novel FINALLY came out and I've had it and another good read hidden on my Kindle waiting until the last to read them because they are my favorite and such a treat.  I was cruising Amazon back in probably...January and saw that the last book was coming out in May so I went ahead and pre-ordered it.

I read pretty much the entire book on Sunday while I was outside tanning in true Sookie style.  I love these books.  They are country, down home, adventurous, and just enough crazy to keep you interested and really begging for more.  I'm sad that this is the last book especially since the ending wasn't what I was hoping for...but as long as Sookie's happy I'm happy! LOL

    I'm really ready for the 3 day weekend.  I hope to get Averie and spend the night.  Get some new sunglasses, and make a trip to Jefferson to go antique window shopping and lunch! All on Saturday and Friday night so I still have all day Sunday and Monday to get even tanner, relax, and get some things done around the house.  I think every weekend should be 3 days!

    How much does it cost to poop!

    Well if you are staying at my house these days the answer would be 255 big ones
     
    Wouldn't you know it the toilets about overflowed last night when Lincoln went to pee.
    He then traipsed outside to check everything out and the report was the septic tank was...
    dun dun dun...FULL
     
    I was so aggravated and stressed about it I tossed and turned all night long. 
     
    I called the plumber today and after a horrible dentist visit I came home to a hole in my yard but no plumber.
     
    After checking back into his office he had an emergency and would hopefully return today.
     
    He showed back up around 4:30 with a pump truck and told me the damage.
     
     
     
    It apparently had been quite some time since my tank had been pumped...I know I've been here for over 2 years and I haven't done it.  When he popped that lid he told me it was WAY over do.  It was hard and the pipes were impacted....all I heard were dollar signs. LOL 
     
    Luckily it didn't cost as much as I thought and he's such a nice guy its worth paying that so I can now go to the bathroom. 
     
    Ahhh the joys of being a home owner!

    Book Reviews: Elusive & Secretive




    I found a couple really great books a month or so back when I was browsing the fiction, travel genre on Amazon.  Sara Rosett isn't an author that I've read before but her books really draw you in and you feel like your running along the sinking streets of Venice with Zoe Hunter.  I love all the travel, mystery, and a little romance that these two books have to offer.

    Not only are they great reads but they are inexpensive and great for your upcoming vacations or just lounging outside enjoying the weather!  The only downfall I have read both books that are out BEFORE my vacay.  That's ok though because I have a real travel read waiting for the beaches of Mexico.

    Political Correctness

    Last week on my way to work I was listening to my regular morning show and they were discussing the appalling behavior of the Abercrombie & Fitch CEO and the comments he's made yet again.  Without going into all the detail pretty much the CEO is known for commenting that the A&F brand isn't for fat, ugly, or the not cool kids.  He is getting tons of criticism because of how mean his comments are.  Yada Yada Yada....after listening to this banter for the majority of my drive to work I had some comments of my own so I clocked in and when I had a free minute marched across the lobby my a friend's office.  I chose this particular friend because we are pretty much soul twins and she would more than likely share my opinions without calling me mean, cold hearted or whatever. 

    SO... I plopped down and told her about the radio show and then proceeded to climb up on top of my very TALL soapbox. 

    I disagreed in every regard with the radio show and could/can see the CEO's side of the story.  He wasn't calling certain kids fat, ugly, or dorky but in life there are all those types of kids.  The cool kids do wear A&F it's just a brand and that's the type of people of wear them. 
     
    It got me to thinking about political correctness and how our world is completely made up of all these little things that we all know are out there but now days for some reason we CAN'T say them and help us if we do because then we are labeled as douche bags, jerks, crude, rude, mean, and cold hearted....
     
    HOW DARE SOMEONE SAY KIDS ARE FAT!  or some kids are just nerds! 
     
    HELLO that's life he wasn't calling them that to their face he was speaking in general terms that are the truth. 
     
    I HATE yes HATE that the world we live in!  The mainly American, politically correct, pussy footing world! 
     
    I don't think that every child, no matter the age, should receive a participation trophy in little league and all be branded and praised as winners.  Reality check they aren't.  Some people are better than others at certain things, some are skinnier, pretty, more well rounded, better readers...whatever it is not everyone is equal.

    By doing this and by living in this overly political correct world we are creating wimps.  All these people grow up and are treated like everyone else never learning that to be rewarded you must earn it.  I mean if I EARN my promotion at work should everyone else be promoted as well just so some one's feelings aren't hurt UUMM NO the real world isn't like that.  Once you leave school life starts, you have to work to be rewarded, work to be labeled a winner, and make your life yourself.  No one is going to just hand you what everyone else is getting to make your life easier and to make you feel equal. 
     
    I don't like a world that is all about feelings and sparing them.  I don't think that we should be mean but when the truth is the truth and it needs to be told then tell it.  I'm not going to lie if you ask me a question and I'm not going to blow smoke up your ass but I'm going to shoot you straight.  I'm not going to walk the halls of a high school and call out the dorks in life...that's mean.
     
    I refuse to raise my kids in this fantasy life the first 18 years of their life. I will motivate them to work hard and go after what they want.  They may not be the best at first but with hard work, the help, and love of family and supporters they will.  I will never tell my child they suck but that the other kid was just better this go around but with practice and hard work they can be great..even better than the kid who won and I will help them every step of the way not encourage them and smother them in false and untrue praises.

    Ok wow! See I told you it was a tall soapbox.  I'm NOT for political correctness just because people can't handle the truth...sorry but not sorry!

    A Day in th Life of...ME

    Part of the Blog Every Day in May challenge is day 15 (describe a day in your life) 
     
    I don't live an exciting life folks and I'm sure like the most of the world I have my exciting moments but this is the ever day....

    • wake up at the last possible second that allows me to get ready and race to work by 8 sharp
    • then work with numbers and making sure they match for the next 8 hours with a lovely hour break in there for lunch.  
    • 3 co-workers and I have formed what we like to call lunch bunch and they are the best.  We get to vent, laugh, and bond over ramon noodles and hot pockets. LOL 
    • I leave work anywhere between 5 and 7 depending on what time of the month it is then head home to fix dinner, blog, spend time with Lincoln, and any house work that needs to be done to maintain our superb living conditions. (excluding laundry of course) LOL 
    • We are usually in bed around 10 where we visit and I read a good bit on my Kindle

    Riveting isn't it LOL :)

    A Fave


     
    I love this picture of myself on my last night in Thailand. 
    Mia and I went out for a night on the town and it was so much fun.
    We made so many memories on that trip that I know we will carry with us a lifetime. 
    I like this picture so much because of many reason. 
    Some of them vain like
    how SKINNY I was
    how tan I was after over 2 weeks in the tropical paradise,
    how long my hair was...we are getting their again FINALLY! 
     
    But also for not so vain reasons like
    how it reminds me of the great country and the nicest people I've ever met,
    the bonding and belly laughs me and my cousin/sister shared,
    and the healing that I went through after a really rough year. 
     
    I would love to go back to Thailand and take Lincoln to share the wonderful land with him. 
    I love Thailand! 
    I've never cried when leaving a place but I cried when I left there. 
    It was an amazing trip.

    for being in a complete funk

    I have no excuse except I'm REALLY ready for vacation! 
     
    Do you ever have those days that you just wake up pissy for no good reason and your dead set on staying that way. LOL Well I had that every day this past week. 
    I think now that school is out for a bit and I know that in less than a month I'll be in Mexico with my love that I'm really ready for a break from work. 
     
    Luckily at the end of this week we get a 3 day weekend and I'm going to really enjoy that extra day!

    I saw this photography project on Yahoo when I turned on my computer Saturday morning and I thought it was very interesting and thought I would tell you to have a look at it. 

    To me all the soldiers or as the British call them Servicemen looked like babies before they left to go to Afghanastan....during they look haggered of course but after all their faces look hard and more sculpted.

    It's a hard knock life

    Once again, if it's not apparent, I've fallen behind on the Blog Every Day in May challenge BUT I plan on still blogging about every topic it just may not be on the same day.  I really am enjoying this challenge because not only do I get to blog about things I've never blogged about before it's also helping me be more creative in coming up with my own creative blog posts. 

    Without further chatter the 16th day of the Blog Every Day in May challenge is to talk about something that is hard in my life and how I'm over coming it!  Wow that's not hard at all....LOL

    Even though I'm a total realist I really don't have any complaints of my life that are major hurdles.  I guess if I had to really think and discuss something it would be to remember that I can't have it all right now.  I am a very motivated and independent person and it is really hard for me to sit back and wait.  Oh did I mention I'm highly impatient. LOL  I'm a doer especially when it's something I've put my mind to so when I know that I want something but can't have it right then it drives me crazy.  It sort of takes over and is top priority.  I do all that I can to make whatever the goal is happen.  I'm sure your thinking yeah a real problem but I think sometimes it is a real problem because instead of living and enjoying the now I'm constantly working towards a future goal.  I don't think neither of these things are bad but too much of one and the lack of the other is. 
    I'm trying to balance and remind myself that I don't always have to plan and do for the future but to just stop and enjoy the happenings of today.  I'm so fortunate and super blessed to have a great family, close friends, a boyfriend that puts up with my crazy antics, a steady job, and beautiful place to lay my head at the end of the day.  Not to mention all the opportunities that I get to jump at in between.

    Not a very hard life and even if it was look at all the stuff I have to be thankful for!

    Happy Mother's Day





    So true isn't it. 

    Happy Mother's Day to all the new Moms and all the seasoned Moms.

    Missing

    Today's topic is something that I miss be it a place, person, thing whatever...

    I decided to go with being able to TRAVEL every 3 months and the sky be the limit!  When I was in Iraq and RnR time came around I would scour the map and hand select a destination...it was so awesome.  I loved being able to go where ever I wanted and to learn so much about that place, experience the culture, and have so many new adventures. 

    Some of my adventures during that time:

    Germany & Austria- I haven't even posted all the stuff that went down in Germany and Austria except the famed AC/DC concert (hangs head in shame I really need to do that) but either way it is my homeland and such an awesome place.  The people are so nice, friendly, and feel like family!

    Thailand- OMG Thailand....my retirement country.  I cried when I left there.  Mia and I had such an amazing time

    Dubai- packed with putting a new spin on an old culture

    Egypt- OLD and sometimes trashy but you can't miss it all the same

    Although those adventures were so amazing I still get to have adventures now that I'm back living in the U.S. they are just spaced further out!  I also get to experience a lot of new and awesome things with Lincoln and that makes it even more fun.  Not only am I making memories of adventures in a new place but I'm also making memories with my love and that makes our relationship and life so much richer!

    Challenge...Catch Up

    Well I fell off the Blog Every Day in May challenge this week. 

    It was kind of a hectic week with finals, new babies (SSOO PRECIOUS), surgery (Lincoln's Mom), and a pinning ceremony (Lara)!  I was gone pretty much every night of the week.  So today I slept in until 9:15ish....a real feat for me these days since I'm usually up by 7 and then watched crazy bitches on LMN ALL day long.  LOL  I haven't got to relax and enjoy being lazy without the constant nag of school work in the back of my mind so it was well deserved and much needed.

    Let's catch up shall we.

    Day 7: Thing (s) I'm most afraid of

    If I really think about what I'm afraid of and not vain, silly thinks like gaining a ton of weight and having ugly children....
    These are two fears I do have
    But come on they really aren't fears when it comes to all the other horrible things that are in this world. 
    So after thinking my answer is....
    I'm most afraid of someone very close to me losing their health and/or me losing someone very close to me like my Mom.  If I really think about it and the way it must feel I get choked up...it's got to be the worst feeling ever and since that is so unknown to me it is very scary!
     
    Day 8: A piece of advice
     
    Gosh there's so many little snippets of advice that I could say that my Mom has always preached to me like..
    protect your reputation in the way you act and who you hang out with because it's going to follow you the rest of your life
    But one that I like that has proved well for me and is something I really had to learn is
    LOVE IS PATIENT 
    It stems from my favorite bible verse and is even tattooed on my wrist in Arabic.

    Day 9: A moment in my day
     
    This is what my desk looks like by 9 everyday and it gets worse before it ever gets better but at the end of the day it's all clean and all the work is done.  It's a really good feeling of accomplishment when I can get it all done.
     
     
    Day 10: Most embarrassing moment
     
    I don't get embarrassed easily and really I had to think on this a while before I could think of something that I considered embarrassing.  I came up with a time in Iraq when I was venting to a co-worker about a guy friend and accidentally sent the email to the GUY and not my co-worker...I was mortified and tried covering my ass but I don't know if it worked.

    What I do

     
    What do I do and not my career is the topic of the 6th day of Jenni's Blog Every Day in May challenge. 
     
    When I read this topic the first thing that came to my mind is I organize.  I love clean lines, no clutter, and a set space for things.  Not only does this explain my everyday life but also my career.  I mean accounting is pretty organized there's a start point, an end point, and slots for specific numbers along the way.  You can't just throw things around, leave things undone, or have clutter.  It's all about organization! 
    When I am organized I just feel like my world runs smoother!

    Adoration

     
    Blog Every Day in May's fifth challenge is to profess your ever dieing love for a fellow blogger.  I couldn't narrow it down to just one so I have a couple.

    First up is NaShae who is the reason I started a blog to begin with.

    NaShae and I go way back....like to preschool days and have been friends ever since.  When I moved to Iraq I found that she had a blog and it really inspired me to start one as a way to keep my family and friends back home informed and also as a little scrapbook of my own.  I love NaShae's posts on her life that is not too far away but far enough that we don't see each other very often.  Love Shae and her blog!

    My next blog that I adore is a blog that I happened upon about a year ago and just fell in love with.  Emily over at The Freckled Fox is amazing.

    She always has a million irons in the fire and her real life posts keeping everyone updated on her ever growing family and projects make me want to get out and do more. LOL  I would love to travel to Emily's state and visit her I think we would be great friends.

    Extra Extra Read All About It!

    Well today has been an exciting day for the Woods/Deal household!

    Remember a couple weeks ago when I wrote a post about money and goals...No?
    OK go see it HERE and come back. 
     
    Ok so now you see that car the uh 2014 Jeep Grand Cherokee in that post that was the goal to get by October...well I went out this morning and bought that car! 
    The exact one that I wanted. 
    I'm so in love! 
    There's a twinge of sadness that my supercharged Corolla truck is now gone because she was such a part of my life but we must move forward to bigger and WAY better things. 
    I'm officially an adult...I have my own, very grown up car with heated front seats, back seats, and heated steering wheel!  I know luxury I'm telling you. 
     I love love love my new car. 
    Lincoln and I went on a little celebratory dinner tonight to Greenville and I just don't want to get out of it.  It rides so smooth and I find more buttons the longer I'm in it.

    Also in that money and goals post is the #3 item of always saving up for travel.  Well....saving up and spending up is what life's about (did that make sense)
    either way Lincoln and I are going to Mexico people! 
     
    The 3rd week of June we'll be relaxing and boozing at the all inclusive Park Royal Resort in Cozumel, Mexico with another fun couple!  I can't wait to get on an airplane and dip my no-tanned self into the beautiful clear blue water of Cozumel. 
    I haven't been there in 8 years so I'm sure it's only gotten better with age! LOL  Not to mention with this CRAZY Texas weather we have been having this year Mexico better be hot and humid because I'm craving the summer feel!

    WWOOOHHHHOOOOO on a new car that I'll be driving for the next 20 years and vacation that will give me memories to reminisce on 20 years from now!  I can't wait!
