Recipe: King Ranch Casserole

Following my creative streak of meal planning I dug out an old recipe that I had only made once before.  I was skeptical on if Hendrik would like this but it was a hit and he really liked it! 
Disclaimer: this recipe is like chili….better after it sits in the frig over night!
 
Ingredients:
4 chicken breast (approx. 2 cups)
12 corn tortillas
1 can rotel
1 can cream of mushroom soup
1 can cream of chicken soup
1 bell pepper
Onion (I use the powder)
Salt- to taste
Pepper- to taste
Garlic powder- to taste
½ tsp chili powder
Grated cheese




 
Instructions:
1.       Boil chicken until done
2.       Dice chicken and put in large mixing bowl
3.       Sauté bell pepper until tender
4.       Use a small amount of the broth and add rotel, soups and heat over medium until smooth and creamy
5.       Once creamy add spices, sautéed bell pepper and diced chicken
6.       Tear tortillas into 1 inch pieces
7.       In  large casserole dish layer tortillas then add chicken mixture a couple times until empty
8.       Top with grated cheese and bake until bubbly at 350 degrees
 
Again this recipe is one that, to me, was better after it was leftover and made great lunches for a few days.
